Filippo Cea is the "elected" almond for pastry in the more refined cuisine. Incomparable, if not indispensable, in the preparation of sweets, almond flour, almond milk and marzipan, which is the main ingredient of the famous Martorana fruit and also the wrapper for the Sicilian cassata. Widely used as a snack in the toasted, salted and coated version.

Cultivars(varieties): Filippo Cea o Mandorla di Toritto;
Region of production: Italy, Puglia region, exclusively in Francesca Dellorusso's farm in the countryside of Toritto and Bitonto (BA).
Almond altitude: 200-400 m above the sea level at the foot of Bari's Murgia
Harvest: September - October;
Picking Technique: Directly from the tree with mechanical aids on to special nets.
Drying and storage: sun dried in shell, and stored in drilled boxes of approx 250 kg.
Shelling and selection: the shelling, the separation and seizing are all mechanical the nuts are then all hand selected
Color: Reddish brown;
Impurity: free from parts of plants, free from insects (dead or alive), or animal contamination.
Bitter fruits(amygdalin): absent;
Humidity: 4.0% -6.0 %;
Ingredients: 100% Filippo Cea almond-Gluten free; - Extra virgin olive oil -
Sea salt -Gluten free;
Roasting and salting: the peeled almond is mixed by hand in extra virgin olive oil, salted with sea salt, roasted at a controlled oven temperature. 

Storage: the almond toasted and cooled down is kept under vacuum at a controlled temperature before being packed, in order to maintain the natural flavour. 
Health benefits: the most important health benefit of this cultivar, is the high content of tocopherol (443 g/ g p.s), an important component of vitamin E, which acts as antioxidant in the human body. A portion of 30 gr. Filippo Cea almond contains 7.76 mg of vitamin E that is approximately 80% of the recommended daily allowance.
Tasting Notes: Intense flavour of casein, with an elegant final aftertaste and remarkably persistence in the mouth, thanks to its richness in essential oils (59,57% of which almost 74% is represented by the acid oleic, followed by a 18,6% Inola acid and a 5,5% palmitic acid). A full and balanced taste with a hint of wheat and white flowers.
Use: as a snack accompained by all kinds of drinks, good with Prosecco, white wine and sparkling Brut
Packing: Bag in Coex transparent heat-salted gr. 500 and vacuum bag 500 gr. and 1000 gr.
