Filippo Cea is the "elected" almond for pastry in the more refined cuisine. Incomparable, if not indispensable, in the preparation of sweets, almond flour, almond milk and marzipan, which is the main ingredient of the famous Martorana fruit and also the wrapper for the Sicilian cassata. Widely used as a snack in the toasted, salted and coated version.

Cultivars(varieties): Filippo Cea or Toritto's almond

Region of production: Italy, Puglia region, exclusively in Francesca Dellorusso's farm in the countryside of Toritto and Bitonto (BA).

Almond altitude: 200 -400 m above the sea level, at the foot of the Bari's Murgia.

Harvest: September - October;

Picking technique: Directly from the tree with mechanical aids on to special nets.

Drying and storage: sun dried in shell, and stored in aerated boxes of approx 250 kg.

Shelling and selection: the shelling, the separation and seizing are all mechanical the nuts are then all hand selected

Colour: Reddish brown;

Impurity: Esente da parti di piante, esente da insetti (vivi o morti), parti di insetto e impurità animali;

Bitter fruits(amygdalin): absent;

Humidity: 4.0% -6.0 %;

Ingredients: 100% Filippo Cea almond-Gluten free;
Storage: The almond peeled and cooled down is kept under vacuum
at a controlled temperature before being packed, in order to maintain
the natural flavour. 

Health benefits: the most important health benefit of this cultivar, is the high content of tocopherol (443 g/ g p.s), an important component of vitamin E, which acts as antioxidant in the human body. A portion of 30 gr. Filippo Cea almond contains 7.76 mg of vitamin E that is approximately 80% of the recommended daily allowance.
Tasting notes: Intenso flavor di caseina, finale elegante e notevole  persistenza in bocca grazie alla sua ricchezza in oli essenziali (59,57 %,  di cui quasi il 74 % è rappresentato dall'acido oleico, seguito da un 18,6% dell'acido inoleico e da un 5,5 % dell'acido palmitico). Palato pieno e bilanciato con ricordo di grano e fiori bianchi; 
Use: Mainly in pastry; 
Packing: Bag in Coex transparent heat-sealed gr.500 and vacuum bag
500 gr. and 1000 gr.
